Permanent concession vendors generally have more options when it comes to equipment that is suitable for cooking and heating hot dogs and sausages. The four main options are char broiler grills, roller grills, hot dog steamers, and hot dog broilers. Each one has advantages and disadvantages. A char broiler grill is good if you would like something that can both cook and relatively quickly reheat your products. Since it takes about 5 minutes to cook a raw bratwurst or sausage on the grill, a common practice is to either partially or fully cook the product before hand and then throw it back on the grill for a couple minutes when a customer orders it.

A char broiler is a great option for mobile/ cart vendors because they operate on gas. Roller grills are an option to consider if you are going to offer customer self-service. The rolling motion can also be attractive to customers. Don’t forget that a sneeze guard might be necessary depending on local health codes. A third option is a hot dog steamer which gives the “traditional” hot dog taste and consistency by steam cooking the product.
These can also be used to keep buns fresh and from drying out. The last major type of cooking equipment is a hot dog broiler. These utilize a rotating rotisserie design to cook the hot dogs.
Both mobile and permanent concession vendors are going to need methods of organizing and dispensing condiments to go with their products. There are multiple options to consider here as well. The option requiring the least amount of mess and effort would be a condiment organizer. This is a unit that holds various individual condiment packets in their own compartments.
Another major benefit of using these is that they mitigate the risks of food-borne illness to almost zero. These are also useful for organizing straws, napkins, salt, pepper, and other small accompaniments.
A pump dispenser is great for holding ketchup and mustard and distributing bulk condiments in a manner that is significantly more sanitary than dishes with spoons in them.
